To me, bread is a symbol of provision and abundance. Phrases like “amber waves of grain” and “bread basket of America” call to mind bountiful harvests and loaves of steaming hot bread fresh from the oven. It’s comfort and necessity rolled up into one!
Bread is the best and most satisfying when it is freshly baked. Day old bread is OK but nothing like the stuff straight out of the oven. How ironic then that there are some things in life that can’t be preserved past the end of the day. Whether tangible or intangible we have to go back to the source to get more for the new day.
Which leads me to ask… what is your daily bread right now? That something that you’re having to trust will be provided to you as you need it? Something that no matter how hard you try, you can’t save up for the next day?
Health, finances, housing, relationships, a forgiving spirit, joy in hard circumstances — whatever they may be. Big or little. Whatever the perceived importance we are encouraged to lay them down daily, in exchange for the strength and the peace we need for this day. In exchange for life.
Living day by day
As humans we have needs. We need rest. We feel loneliness. We feel hunger.
If you ask me, it’s down right inconvenient! But no matter how much I wish I could ignore the annoying and painful reminders of my humanity, I can’t.
Sometimes we go through seasons in life where we experience these deep needs and yet have no way of meeting them ourselves. We got nuthin’. Nothing in the store-house. Nothing on the table. Little strength remains and hunger is setting in.
And yet our needs are known even before we voice them:
“For your Father knows exactly what you need even before you ask him!” (Matthew 6:8b NLT)
He is a God that comes through for His people. Nothing surprises Him. Let’s take Him at His word!
Provision Will Come
I would say that I’m living in a day by day season right now. Though the issues are different, it reminds me of a similar time when I was dealing with health problems and seeking healing. And now look! I have a delicious GF bread recipe that I’m about to show my dear, patient readers and I’ve got my health to boot! It just goes to show, when we’re walking through the desert we have to trust that we will see the grassy meadows and rushing rivers again.
He provided then, He will provide now.
If you find yourself in a “day by day” season too, take heart for provision will come! Perhaps not in the way you thought it would and probably not in the time frame that you’d like (I know – grrr!), but it will come and the way will better than you imagined and the timing superb!
Let’s wait on Him and reap the bountiful harvest of hearts steadfastly trusting.
In the meantime, while we’re “waiting”, let’s remember how provision came to us in the past and enjoy the abundance that we have in this moment. For me, it’s not just the big things but the little things… like GF bread, especially GF bread that tastes GOOD and not like cardboard!
Multi-Grain Sandwich Bread GF YF
Gluten-free, yeast-free, and delicious! This bread has a sweet and savory flavor, good texture, and a great crust. It holds together well, making it ideal sandwich bread. Cut into thin slices, store in the freezer to keep fresh, and thaw or toast when ready to eat.
1 1/4 cups Bob’s Red Mill All-Purpose
GF Baking Flour
1/2 cup buckwheat flour
1/4 cup flaxseed meal
1/4 cup quick oats
1/4 cup oat flour
1 1/2 teaspoons baking powder
1 teaspoon sea salt
1/2 teaspoon baking soda
1/4 teaspoon xanthan gum
3 eggs, whisked
2/3 cups plain Greek-style yogurt
1 tablespoon agave nectar
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
1/4 cup club soda (a fresh bottle is best)Quick oats, for topping
Preheat oven to 350 F.
Combine all-purpose GF baking flour, buckwheat flour, flaxseed meal, quick oats, oat flour, baking powder, sea salt, baking soda, and xanthan gum in a large bowl. Whisk together until well incorporated.
In a separate bowl, mix together the eggs, yogurt, agave nectar, vanilla extract, apple cider vinegar and club soda. Add to the flour mixture, stirring only until the dry and wet ingredients are just combined. Do not over mix.
Pour into a lightly sprayed 9 x 5 inch loaf pan and sprinkle the quick oats on top. Bake for 35 minutes or until crust has risen and darkened and sides have pulled away from the pan. Let sit in the pan for 5 minutes then invert onto a wire rack to cool. Makes one 9 x 5 inch loaf.
