Spicy + Bold + Sweet
I’ve always loved chai tea. It’s spicy and bold and sweet. I also really love cookies. For quite awhile I’ve been wanting to add the contents of a chai tea bag into a cookie recipe!
Crazy right? Crazy delicious…
This past weekend I decided that it was do or don’t time and this time it was time to do. Yes.
So anyway here is the fruit of my experimentation. These cookies have quite the novel flavor! The dough itself tastes great and the cookie itself is delicious.
(I wish there was another word for delicious. *sigh* Scrumptious? hmm.)
Chai is a flavor that reminds me of autumn. I know it’s a leetle premature to start busting out the fall fare, but it’ll help us get excited for fall to actually get here and well, these are really tasty.
So why wait?
Vanilla Chai Tea Cookies
2 cups All-Purpose GF flour blend OR Spelt flour
1 cup quick oats (I put rolled oats in the blender for a few seconds to chop ‘em up small.)
1/4 cup flaxseed meal
1/4 cup finely chopped almonds (I put mine in the food processor.)
2 Vanilla Chai tea bags- use scissors to cut them open, pour out the contents, and discard the leftover empty bags (I used Stash’s Decaf Vanilla Chai. It has no artificial flavorings or sweeteners in it.)
1 1/2 teaspoons cinnamon
3/4 teaspoon freshly grated nutmeg
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon sea salt
WET:
2 eggs
3/4 cup xylitol
1/2 cup extra-virgin coconut oil
3 teaspoons pure vanilla extract
1 teaspoon organic unsulphered blackstrap molasses
3/4 teaspoon apple cider vinegar
Preheat oven to 350 degrees.
Combine all dry ingredients in a large bowl and whisk until well mixed. In a smaller bowl stir up the wet ingredients. Be sure to heat the coconut oil over low to melt it completely before adding it in. Pour wet mixture into the dry and stir until just combined. Drop from teaspoons onto a cookie sheet and bake for 10 minutes or until golden brown. Store in a plastic container or freeze for maximum freshness.
Yield: about 3 dozen cookies.

Renaissance Life has been invaluable to me in my journey to better, smarter eating. My favorite recipe of Gabriela’s has to be the Green Smoothie. As a newer, clueless vegetarian moving away to college, looking for fresh and exciting ways to consume fruits and veggies has been a challenge…until I realized I could drink them too! Her recipe is an easy framework for creating your own variation with whatever might be on hand. Thanks, Gabriela! I’ll never associate “healthy” with “boring” again!

What an intriguing cookie. Do you not get any bitterness from putting the tea right in? I am not familiar with chia tea, but these look good.

Hello Debra! Yes these cookies are a bit different in that I threw the tea bag contents in the batter instead of brewing up a cup and using the brewed liquid. The kind of tea I used gave it no bitterness, just a pleasing spice flavor. I’ve loved chai tea since I can’t remember when! It’s really a fall/winter beverage but that doesn’t matter here.
If you like pumpkin pie and pumpkin bread I’m betting you’ll love chai as they basically use the same spices. Thanks for visiting!
