NUTELLA!
Before my “unsaved days” (like when I ate gobs of super sweet stuff like Nutella all the time and ate a whole bag of Twizzlers in one sitting – HUGE confession – btw it’s so not worth it.
) But back on track…I’ve forgiven myself for the past.
Unlike the original, this stuff won’t give you a sugar-high or sugar-low, has REALLY GREAT FLAVOR (secret: carob powder) and includes a myriad of nutrients from the super cool “flaxseed” to my ultimate favorite health food the “coconut”. If you don’t have time for a meal or breakfast or whatever, two spoons of this and you’ll be good to go for hours.
Oh and guess what?! I filmed another video showing you how to make it. It’s super easy and fun and exciting and interesting and healthy and… just watch it…
Better than Nutella Spread
1 1/2 cups roasted almonds***
1 cup shredded, unsweetened coconut
1/2 cup flaxseeds
1/4 cup cocoa powder
2 tablespoons carob powder
1/4 teaspoon sea salt
2 tablespoons xylitol (OR other type of sweetener like agave, honey, stevia, or cane sugar — the texture will vary slightly depending on sweetener you choose to use.)
2 teaspoons pure vanilla extract
In a food processor or high powered blender process almonds until desired consistency has been reached. I like mine really smooth. Add the shredded coconut, flaxseeds, carob and cocoa powder and process until the flaxseeds are smooth. Next, add in the sea salt, your sweetener of choice, and vanilla extract. Mix until, you guessed it, smooth. Then… you’re ready to dig in!
*** To roast almonds: place on cookie sheet and bake at 325 degrees for 4 minutes, stir, then bake another 4 minutes until golden brown and aromatic. The almonds will expand slightly and will make popping sounds as they cool.
Some friends and I hung out last night and I brought the Better than Nutella Spread along for them to taste test.
THEY DEVOURED IT. (I’m so glad that I had had some saved back home. hehe)

This looks both yummy AND easy to make! I like Nutella, but never buy it because it triggers a migraine every time. I’m going to try this – it would be great to have the joy of Nutella without the hindrance of a headache and sugar overload! Thanks for the video too!
Hello Lori! Nutella gives you a migraine too? Grr! I have to be careful with super sugary chocolate products myself. They can getcha good. I’m pleased to say this is a migraine-free recipe (as much as I can say that!).
The carob and chocolate make a smooth and complex combo. It’s nutella with a twist.. it’s newtella! I hope you enjoy!
Question: can I use already ground flax seeds?
Another question: I’m guessing that the flax seeds are completely ground up in the final product, even if they’re added whole during the process (like you showed in the video)?

Yes indeed – an afterthought I had was to simply use flaxseed meal. Duh. It’ll speed the process up too, as it took awhile to get the seeds smooth. And yes I processed everything until it all was a silky smooth spread.
